i was tired of restauraunts cooking the rice and meat separately
Ingredients General:
3/4 cup of rice
2-3 shiitake mushrooms
1 chicken thigh
1 small piece of ginger
green onion stalks
some vegetables to steam
cornstarch
vegetable oil
portable gas stove easier to have higher flame
Chicken Marinade:
1 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp sesame oil (or 1 tsp roasted sesame oil)
dash of salt
dash of sugar
dash of white pepper
1 tbsp corn starch
3 tbsp water (warm)
1 tsp rice wine, sake, etc
1 tbsp oil
small piece of ginger
(optional) small onion bulb shallot
Shiitake Marinade:
1/2 tbsp oyster sauce
dash of sugar
dash of corn starch
Serving Sauce:
1 tbsp oyster sauce
1 tsp soy
1 tsp tamari soy (use egg soy)
1 tsp sugar to taste
Instructions (Prep):
wash and soak rice in bowl pot (30 min ish)
rehyrdate shiitake (15 min ish)
cut chicken into 1/2 inch strips
pat chicken dry. marinate
squeeze mushrooms and cut stems off. cut smaller as desired. marinate
prep other greens
Instructions (Cooking):
remove soaking water and add desired amount of water. usually on the dryer side. 1:1 ratio? after soaking
add drop of oil to water and mix to separate rice
cook rice until just about to boil then uncover. let continue to cook (boil)and absorb water
add chicken and vegetables when water not seen on surface anymore but bubbles still on top
put lid on. continue to cook on low. in 5-10 minutes boiling sound will switch to crackling
heat up pot. move pot around over medium flame to heat pot. varies on pot but ~45sec-1min per side
turn heat to low. add oil from lid (drip down). let cook for 2 minutes flat
move pot around over medium flame to heat pot. varies on pot but ~45sec-1min per side
open pot, add green onions, let rest with residual heat before serving. 5 min?
